This Single Serve Chia Seed Pudding Recipe is on repeat in my weekly meal prep. I love making this in individual jars that I can store in the refrigerator for easy snacks and an on-the-go breakfast. The chia seeds are packed with fiber, and I love to top it off with fresh fruit or preserves.
Ingredients
1/2cupalmond milk
2Tbspchia seeds
1tspmaple syrup,or honey/sweetener of choice (Skinny Swap Sugar Free Maple Syrup)
1Tbspstrawberry preserves,optional
1Tbspfresh strawberries,diced
Instructions
In a small single serve mason jar or small serving dish with a lid add the almond milk.
Top with the chia seeds and add the sweetener.
Tightly close the jar or serving dish and shake well until mixed.
Let the chia seed mixture sit for 3 minutes.
Then shake well again, making sure that the chia seeds mix well and are not sticking to the bottom of the dish.
Refrigerate overnight before serving.
Top with fresh fruit or preserves as optional toppings. Enjoy!
