When it comes to breakfast, everyone always wants pancakes! To make them a little healthier, I created Healthy Mini Banana Pancakes to satisfy my kids’ pancake cravings. I use banana to bind the batter and whole wheat flour for protein and fiber. Healthy Mini Banana Pancakes are great served with syrup, fruit on top, or your favorite fruit preserves. However you serve them, Healthy Mini Banana Pancakes are delicious!

Healthy Mini Banana Pancakes How Healthy Are Healthy Mini Banana Pancakes?

These pancakes weigh in at 197 calories per serving. Each serving allows for three pancakes. My recipe is a great source of fiber, as well as protein at 11 grams per serving.

These pancakes unfortunately do not fall into the low carb category. Not to worry, I have plenty of other low carb options for breakfast. Try my Easy Keto Crustless Quiche.

Ingredients for Healthy Mini Banana Pancakes

  • 1 cup whole wheat flour
  • 2 bananas, very ripe
  • 1 cup skim milk
  • 2 tbsp brown sugar
  • 2 tsp baking powder
  • 2 egg whites
  • 1 egg
  • ½ tsp salt

How to Make Healthy Mini Banana Pancakes

Begin with the dry ingredients. In a medium size bowl, mix whole wheat flour, 2 tsp baking powder, and ½ tsp salt. Use a wire whisk to mix ingredients together. In a separate medium size bowl, mash bananas using a fork.

Add brown sugar, egg, egg whites, and skim milk to bananas. Mix wet ingredients together using a spoon or spatula. Add dry ingredients to wet ingredients and mix using a spoon or spatula. The batter will be thick.

Using a well heated pan, spray the pan with non-stick cooking spray and add small spoonfuls of batter to make each mini pancake, making sure to flip pancakes to cook both sides evenly.

Serve pancakes with sugar-free maple syrup and fresh banana slices.
