Easy meals that only use one pot are my favorite. The kids have been requesting my One Pot Cilantro and Lime Chicken with Rice lately, and I am happy to oblige! I start by marinating the chicken in a homemade lime and cumin mixture. Then I sauté some bell peppers and onions until soft. In the same pan, I sear the chicken and cook it until juicy, golden perfection. I toss it all together with some ready-made rice and dinner is done! There is nothing easier than One Pot Cilantro and Lime Chicken with Rice, and the family will love it.

What Are The Health Benefits of This Dish?

This dish as written has a ton of protein inside without a lot of fat or calories. I use brown rice because I like the added vitamins that it gives. I also use lean chicken breast and fresh vegetables and mix it all together with the rice. The sauce contains lime juice and extra virgin olive oil, and I top everything with fresh cilantro leaves. So simple but so yummy!

Chicken and Rice

Ingredients in One Pot Cilantro and Lime Chicken with Rice

  • extra virgin olive oil
  • lime juice
  • lime zest
  • sugar
  • cumin
  • salt
  • black pepper
  • boneless, skinless chicken breasts
  • onion
  • red bell pepper
  • green bell pepper
  • Ready Rice Whole Grain Brown Rice
  • fresh cilantro

How to Make This Dish

Add 1 tablespoon of oil, lime juice, lime zest, sugar, cumin, salt, black pepper and chicken to a gallon-size resealable bag.

Before Marinating

Shake the contents up to evenly combine the marinade with the chicken, and refrigerate for 30 minutes.

Marinade

While the chicken is marinating, heat a large skillet over medium-high heat. Add the remaining tablespoon of oil and cook the onions and bell peppers for 10-12 minutes, until soft.

Reserve the vegetables on a plate. Do not wash the skillet.

Microwave the rice according to package directions and set aside.

When the chicken has marinated, reheat the skillet over medium-high heat and transfer the chicken and its marinade into the skillet. Cook for 3-4 minutes on each side, until cooked through and the marinade has come to a boil.

Add the reserved vegetables and rice pouches to the skillet. Stir in the chopped cilantro.

Garnish with additional lime wedges if desired.

This easy chicken and rice recipe utilizes fresh lime juice and tender peppers and onions, topped with fresh cilantro. All made in one pot, so clean up is a breeze!

  • 2 tbsp extra virgin olive oil
  • juice of 2 limes, (about 4 tablespoons)
